How to Make a Gluten Free Pie

The easiest way to make a gluten-free pie is with 3-Ingredient Gluten Free Pie Crust! Super flexible, you can use this recipe to make either a sweet or savory crust. To start, you’ll need gluten free bread, butter or refined coconut oil, an egg, and water. Then, just follow the simple steps in this recipe video

For the Cheater’s Gluten Free Pie Crust

  1. Blend & Form. Cut the bread into small pieces, and blend it in a food processor until a meal-like texture is formed. Then, add the egg, pulse a few times, and add the butter or coconut oil. Process all of the ingredients until a dough has formed. 
  2. Refrigerate. Roll the dough into a ball, and store it in the refrigerator for 1 hour. 
  3. Roll Out and Bake. Once all of the ingredients are combined and chilled, roll the dough out as you would a regular pie crust, and bake it in the oven for roughly 30 minutes.

You can also make traditional gluten free pie crust with gluten free all purpose flour, ice water, and butter or plant-based butter! Like we did in our latest pumpkin pie recipe. This method takes slightly longer but is equally as delicious!

Baking Tip: For pies with a more liquid center such as no-bake pies, fruit pies, or even quiche, par-baking (also known as blind baking) the crust is the best way to prevent it from becoming soggy.

To do so, simply bake the crust for roughly 15 minutes or until it begins to brown. Then, add your filling, and bake as usual.

Pro-Tip: To save some time, skip this step and use a pre-made gluten free pie crust mix or a frozen gluten free pie crust shell instead!

Egg Free Pie: Most people use flax eggs to replace eggs in pie recipes, but I much prefer to replace eggs with extra starch such as arrowroot starch, tapioca starch, or cornstarch instead. The starch binds with the milk or coconut milk to create a thick, slightly squishy texture similar to a regular pie.

  • Keep the ingredients cold – Keep your butter in the fridge, and add ice cubes to the water for the best results when making pie crust. Keeping the dough cold will allow the butter to soak in while baking and create a soft, flaky crust. 
  • Don’t touch the dough – Okay, it’s not realistic not to touch your pie dough ever, but handling it as little as possible will prevent it from picking up any oils from your hands and becoming too warm. 
  • Place pies on a baking sheet – Preheat a sheet pan in the oven, and place your pie pan on it in the oven on the lowest rack to prevent soggy crust. It also helps catch any runover that may occur from an overly full pie pan! 
  • Cool completely – Unlike other desserts like cookies or brownies that can be enjoyed right out of the oven, pies need time to set. Otherwise, their center will be runny and nearly impossible to slice.
