Simplify dinnertime and make your own gluten-free skillet enchiladas with this one-pan recipe that’s easy to make and full of flavor.

Skillet Enchiladas with Ground Beef

Enchiladas are probably one of my favorite meals and if you’re like me finding ways to make them fast and easy is a huge plus. This delicious dinner recipe is one that you will want to keep on hand.

It’s so easy and quick to put together and has all the tastes of rolled and baked enchiladas but without the fuss or heating up your oven. This recipe is gluten-free and dairy-free but you can easily switch out the ingredients if you don’t need it to be.

How to Make Skillet Enchiladas with Ground Beef:

One pound ground beef browned and chopped up in a large skillet.

In a large skillet, brown one pound of ground beef over medium-high heat. Chopping it up as it cooks.

After it is browned add enchilada sauce, diced chiles, fire-roasted diced tomatoes, and salsa.

Stir and cook over medium heat until heated through.

Add bite-sized torn corn tortillas to the skillet and stir. Add one cup of your favorite dairy-free or regular Mexican-style cheese. Stir occasionally while continuing to cook for 5 minutes and then lower the heat to low and let simmer for another 5 minutes.

Ingredients for Skillet Enchiladas:

  • ground beef
  • gluten-free enchilada sauce – I like to use Hatch brand it’s gluten-free and has a terrific flavor.
  • fire-roasted diced tomatoes
  • diced chilies  
  • salsa, gluten-free
  • gluten-free corn tortillas – I used 15 6-inch tortillas and tore them into bite-size pieces.
  • dairy-free Mexican-style cheese

For gluten-free enchiladas make sure all packaged foods are labeled gluten-free.

What to Serve with Enchiladas: 

  • Refried beans
  • Black beans
  • Mexican rice
  • Corn muffins
  • Corn casserole
  • Avocado
  • Guacamole
  • Lime wedges
  • Dairy-free sour cream
  • Additional cheese

Are Corn Tortillas Gluten-Free?:

You will need to make sure they are labeled gluten-free. Corn tortillas normally aren’t made with any wheat but they could be made on shared equipment. 

How to Make This Recipe Even Easier with Pre-Cooked Ground Beef:

When you’re short on time for dinner one of my favorite meal hacks is having ground beef already cooked and frozen in one-pound packages. Take the package out of the freezer in the morning and place it in the refrigerator to thaw. When it’s time for dinner place it in the skillet to heat up and continue with the rest of the recipe.

Ingredients

1 lb ground beef

(Be sure all of the following are labeled gluten-free)

1 15 oz can Hatch enchilada sauce
1 14.5 oz can fire-roasted diced tomatoes
1 4 oz can diced chilies
1 cup salsa
15 6-inch gluten-free corn tortillas
1 cup dairy-free Mexican-style cheese


Instructions

In a large skillet, brown one pound of ground beef over medium-high heat. Chopping it up as it cooks.

After it is browned add one can of Hatch Enchilada Sauce, a 4 oz. can of diced chilies, fire-roasted diced tomatoes, and one cup of salsa. Stir and cook over medium heat until heated through.

Add bite-sized torn corn tortillas to the skillet and stir. Add one cup of your favorite dairy-free or regular mexican-style cheese. Stir occasionally while continuing to cook for 5 minutes and then lower the heat to low and let simmer for another 5 minutes.
