I’m sharing my recipe for Easter cake pops that are shaped like eggs and sit on edible pretzel and peanut butter nests. I’ve also rounded up some other darling Spring pops for you!

We also share our white house Easter party that was so bright and full of Springtime cheer. The food was the highlight of the get together and even acted as decor!

This white house Easter party is everything that embodies a Spring gathering! From light decor to scrumptious food and desserts, we made sure it was all present.

The edible nests with carrot cake eggs were a whimsical themed dessert to complete the meal and go great with our non-alcoholic mimosa mocktail.

Fresh florals are another must at all gatherings. They bring life to an event and offer a beautiful scent as well. Always choose blooms that are in season so it pairs well with your celebration.

For texture, drape a big comfy white marbled blanket over one of the end chairs. A white fur rug also provides texture and gives that “white rabbit” feel to your Easter celebration.

If you’d like to do something extra special for the kids in attendance, I recommend hitting up the Target dollar spot to find Easter bags and goodies. I found these canvas bunny bags and cloth carrots that seemed just too perfect.

Easter Cake Pops

I love making cake pops because they are so much more forgiving than cake. You literally bake the cake and crumble it up to get these little morsels!

While you can keep the decor on them simple like we have, I also wanted to show you a few other darling design options. Not all are gluten-free but they can easily be made GF.

Like these tasty treats, our gluten-free cinnamon rolls are another favorite Easter treat of ours. They are a little extra work but they are SO worth it!

These egg pops from The Anthony Kitchen are SO darling and I love the simple yet elegant design with sprinkles.

And Wilton does another fun take on egg cake pops with different colors like plastic or dyed eggs would be!

My friend Jules makes CUTE gluten-free egg pops that she served up in a little Easter basket for an extra fun presentation.

Easter Dinner Menu

For our meal we served up a delicious baked ham, red garlic roasted potatoes, vegetable soup, and a delicious chicken cordon bleu pot pie with carrot rosettes. This meal is all gluten-free and incredibly easy to prepare.

The last thing you should be doing during a family gathering is slaving away in the kitchen while everyone else visits. For dessert, we served our edible Easter eggs on pretzel nests. The kids loved them!

Things don’t need to be overly styled or expensive to be memorable and oh-so fun. Visit with your guests, laugh and have a great time with them. After all, this is what they will truly remember…

Easter Cake Pops Recipe + 5 More Ideas

Our Easter cake pops are shaped like eggs and sit on edible pretzel nests are so yummy! I’ve also rounded up some other Spring pops & share our Easter party.

Ingredients

  • 2 1/4 C all-purpose gluten-free flour-Glutino brand works fabulously
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 tsp. baking powder
  • 1 tsp. xanthan gum
  • 1 1/2 C sugar
  • 1/4 C butter melted
  • 2 eggs
  • 3 C carrots shredded
  • 1 T cinnamon
  • 1/2 C sour cream
  • 4 oz. cream cheese
  • 2 T butter
  • 2 C powdered sugar
  • 1 package white almond bark
  • 12 oz. Glutino stick pretzels
  • 1 1/4 C peanut butter
  • 12 oz. white chocolate chips or almond bark

Instructions

  • Preheat oven to 350°.
  • Meanwhile, prepare 9×13 pan with gluten-free baking spray
  • In a stand mixer, beat butter and sugar
  • Add eggs, carrots, cinnamon and sour cream and mix well
  • In another bowl, combine flour, baking soda and powder, salt and xanthan gum
  • Slowly add dry ingredients to wet ingredients
  • Bake at 350° for 40-42 minutes or until toothpick inserted in the center comes out clean
  • While the cake is baking, prepare the frosting
  • Beat cream cheese and butter until fluffy
  • Slowly add in the powdered sugar
  • *If it is too thick, add milk slowly
  • After the cake has cooled, crumble it into a large bowl
  • Add cream cheese frosting and mix with hands
  • Roll into small egg like shapes
  • Melt almond bark over low heat then dip the cake eggs into it until completely covered
  • Cool in the freezer on a silicone baking mat or wax paper lined baking sheet
  • Meanwhile, prepare the nests by melting peanut butter and 12 oz. white chocolate chips or almond bark over low heat
  • Once melted, remove from stove and slowly pour over pretzels
  • Combine well and then place by small amounts in the form of nests onto wax paper or silicone baking mat lined baking sheet
  • Place in freezer for 15 minutes
  • Top each nest with 1-2 carrot cake eggs

Notes

I love using pretzel sticks for this recipe.

These store at room temperature for 2-3 days.
