STEP 2: Add the beans, diced tomatoes, cooked chicken, broth, ketchup, chili powder, basil, black pepper and bring to a boil then reduce the heat and simmer, covered, for 20 minutes, stirring occasionally.

  • 1 tablespoon olive oil
  • 2 cups onion chopped (about 2 large)
  • 1 cup green bell pepper chopped
  • 4 cloves garlic minced
  • 2 cans fire roasted diced tomatoes undrained
  • 2 15-16 ounce cans black beans or kidney beans, rinsed and drained
  • 1 cup chicken broth
  • 1/4 cup ketchup
  • 2 tablespoons chili powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 4 cups chicken breast cooked, diced or shredded
