Baked Oatmeal Bars

Oh my goodness you guys, these baked oatmeal bars are absolutely scrumptious! They are literally my boys very favorite breakfast. They think they are getting a real treat but what they don’t know is that I am always happy to make it for them.

This recipe is the only way I can get my kiddos to eat oatmeal. You can change up the variety to be blueberry, peach or any other flavor you’d like. We’ve even made the maple brown sugar variety. My kids request this breakfast more than any other!

We are not a cereal eating family. I just never really acquired a taste for cereal because growing up, my mom almost always prepared a hot breakfast. I love that tradition so now try to do the same for my kids.

Don’t get me wrong, it isn’t some big production. We usually go simple with fried eggs and fruit. I also love to bake potatoes then cut them in the morning to make easy home fries.

I will say though that after eggs and breakfast meats, it’s nice to change it up with something sweet. We do make our gluten-free fried donuts and gluten-free French toast casserole often as well. Our Ebelskiver recipe is always great too but I love delicious new ideas. They do need to be quick though because this mama isn’t a morning person.

Are oatmeal bars healthy?

Oatmeal bars are full of fiber and good protein filled eggs or flax so yes, in my opinion, they are a healthy, well rounded breakfast choice. Yes, there is butter and brown sugar but I believe using real butter is the best way to go. If you want to make them healthier, use coconut sugar instead of brown sugar.

The combination of warm brown sugar, hearty oats and fresh fruit are just such a great trio. I love finding breakfasts that are both fresh and easy to prepare.

While we made strawberry shortcake variety here, you can make any flavor. Simply use whatever flavor oatmeal packets you have. Like our oatmeal pancakes with buttermilk syrup and gluten-free French toast, these breakfast bars are super easy to make ands so tasty!

Gluten-Free Oats

Some people with celiac disease are not able to tolerate oats. The best thing to ensure your oats are truly gluten-free is to buy them certified gluten-free. We like and trust Gluten-Free Prairie oats because they are grown in dedicated gluten-free fields in gorgeous Bid Sky, Montana. 

Their oats are amazing in so many recipes including our chocolate oatmeal cakegluten-free meatloaf, gluten-free oatmeal cream pies.

How to make baked oatmeal bars

  • Preheat oven to 350 degrees
  • Generously spray a quarter sheet (9×13) baking sheet with non-stick cooking spray
  • Combine all ingredients in a bowl then spread into your greased baking sheet
  • Bake at 350 degrees for 20 minutes
  • Let bars cool 5 minutes then spread with jam
  • Top with sliced strawberries and enjoy

I love these strawberry shortcake gluten-free breakfast bars because they are so delicious but, they can also be on the table in less than 30 minutes. It really only takes 5-8 minutes to prepare then just over 20 minutes to bake.

They are great on their own or served with some delicious gluten-free breakfast casserole or just eggs. I also love serving them with our non-alcoholic mimosa mocktail or this cranberry mocktail.

Get the delectable flavor in these bars from GF oatmeal packets. I love that they can be used for more than just hot cereal. The best part? You can get creative with the flavor by using a variety of flavors from maple and brown sugar to strawberry or blueberry.

How long can you keep baked oatmeal?

These bars will likely not even need to be stored because you will gobble them right up but should you need to, store the for up to five days in the refrigerator or three days at room temperature.

Ingredients

  • 4 GF Flavored Instant Oatmeal packets
